Forgotten Delicacies

PADIŠPANJA (TRILJ CAKE)
- 5 egg yolks
- 5 spoons of sugar
- 1 baking powder
- 1 vanilla sugar
- a bit of rum
- 5 spoons of flour
- 5 egg whites
Custard:
- 4 egg yolks
- 2 spoons of sugar
- 2 spoons of flour
- 1 vanilla sugar
- 10 dkg of cooking chocolate
Beat egg yolks and sugar until they are creamy, add baking powder, vanilla sugar, a bit of rum, grated lemon peel, flour and, in the end, firmly mixed egg whites. Pour the mixture into a mould and bake at 200 ˚C.
Custard preparation: Mix egg yolks and sugar, add vanilla sugar, flour, boiling milk. Cook it all together until it steams. When it's condensed, add chocolate bits.
PORK RIND CAKE
- 1 kg flour
- 2 baking powders
- 40 dkg ground pork rinds
- 40 dkg sugar
- 4 eggs
- 2 dl milk
- lemon or orange peel
- rum
- plum or cherry marmalade
Mix 1 kg flour with 2 baking powders, add 40 dkg ground pork rinds, 40 dkg sugar, 4 eggs, 2 dl cold milk, lemon/orange peel, rum.
Knead the dough carefully, divide it into 4 parts, roll it until it is 1 cm thick, spread the plum or cherry marmalade, roll and bake at 160˚C for about an hour.
WEDDING DAY HEN RISOTTO
For 20 persons
- 3 hens
- 1 kg rice
- 1 kg onions
- 1 garlic clove
- 1 parsley sprig
- 2 spoons of homemade sweet pepper
- salt
- pepper
- homemade lard for stewing
- chicken stock for stewing
